As we are becoming more aware of the link between diet and disease there is increasing emphasis on the prevention of chronic diseases such as heart disease and obesity, as well as the role of health promotion. We can optimise health and well being by eating a balanced diet.
With this increasing awareness, it is important that the food industry is able to respond to changing consumer demands. By understanding the characteristics and the composition of food, their microbiological and nutritional quality and the effect of storage and processing of foods, new products and techniques can be developed to meet these demands.
